Excerpt: Broxton Old Hall Broxton Old Hall (or Broxton Higher Hall ) is in Old Coach Road 0.5 miles (1 km) west of the village of Brown Knowl , in the civil parish of Broxton , Cheshire , England (grid reference SJ487533). It is a Grade II listed building . History The site has been occupied since before 1327. The house dates from 1595. It was built by Thomas Dod and later bought by Sir Philip Egerton in 1670. In 1873 the house was extended to the sides and to the rear to a design partly by John Douglas . Architecture The house is timber framed with oak frames and plaster panels. The roofs are of stone slates and have ornate bargeboards and finials . The chimneys consist of detached diagonal flues . The house is in two storeys. The original part of the house has four bays and two gables and a gabled porch. To the left of this part of the house is a recessed wing with one gable and to its right is a projecting wing with one gable. To the sides of each of these are further recessed wings, that to the left having a further gable. The windows are of oak; those in the upper storey have mullions and those in the lower storey have mullions and transoms . Pevsner describes it as being “an ornate gabled black and white house”. The lodge to the hall is also listed Grade II. It is dated 1873, is a timber framed building on a brick plinth and was designed by John Douglas. It has one storey and is in Jacobethan style. Gardens The grounds of the hall are included in the U.K. Database of Historic Parks and Gardens. They include a formal garden, garden terraces and lawns. The grounds are not open

For the purpose of noticing more particularly the different buildings a perambulation of the boundary may not be uninteresting. Entering at the new opening in Newgate-street, the new Hall and the Dormitories built upon the site of the old Hall, come at once within view. The Hall is an elegant specimen of Gothic architecture. Viewed from the area at the back of the houses in Newgate-street, the windows have a most imposing effect. It is built upon arches which form a noble cloister, and over the centre are recorded the names of the officers of the Institution under whose superintendence the building has been erected (see the Frontispiece). The inscription, which is surmounted by a bust of King Edward, is in the following words : ‘ This Hall, erected by public munificence, was opened for ‘ the use of the Children of Christ’s Hospital, on the 29th day i of May, 1829; The Right Honourable William Thompson, ‘ M. P. Lord Mayor, President; Thomas Poynder, jun. Esq. ‘ Treasurer; James Shaw, F.A.S. Architect.’ The entrance to the interior is through a corresponding arch on the opposite side of this cloister,’ and is approached by a spacious flight of stone steps.The dimensions of this magnificent room are, 187 feet long, by 51 5 wide, and 46a feet high. This is the only vinegar not made from wine, but from the cooked and concentrated must of the white grapes of the Trebbiano vine. Balsamic vinegar is aged in kegs made of different woods: oak, cherry, chestnut, mulberry and ash, one for each year of maturing. When the new grapes arrive in the fall (autumn) some must from the first year is syphoned into the next barrel, some of this into the third year barrel and so on. The result of this complicated process is a nectar with a well-balanced flavor and a rich velvety-brown color. By law, vinegar that is labeled aceto balsamico tradizionale must be at least ten years old and in fact, it is sometimes 50 years old or more. It is full-bodied, rich vinegar with a dark brown color glinting with gold, and is very aromatic, with a peculiarly delicious flavor all of its own. There also exists a commercial version, called simply aceto balsamico which cannot be sold as tradizionale. It has a similar flavoring but has not been aged for so long. The flavor is sometimes obtained by adding a little caramel to a good-quality white wine vinegar. Balsamic vinegar is produced in the province of Modena in Emilia Romagna, and also, by a slightly different method, in the province of Reggio-Emilia. Up until the 1980′s it was almost unknown outside the region, but now it is a popular ingredient in many dishes. Good balsamic vinegar is used to dress strawberries, to sharpen a vanilla ice cream, to flavor consomme, and for special marinades. It seems odd, but aceto balsamic tradizionale also makes an excellent thirst-quenching drink diluted with ice and sweetened with a little sugar.
